Grease Trap

According to the International Building Norm 1825, commercial kitchens generating wastewater must have pre-treatment plants to ensure that fat, oil and grease (FOG) are not discharged into the public sewerage network. Otherwise, very greasy wastewater puts the pipe systems and drainage equipment at risk. Grease and oils are deposited with other wastewater components on the walls of the pipes and can lead to corrosion, blockages and noxious smells. Hence, grease separators, also known as grease traps or grease interceptors, have to be installed to retain greasy wastewater. All our grease separators are produced according to EN 1825 and work using gravity. Their different densities are used to separate the fat/oil from the wastewater. FOGs have a lower specific gravity than water, which makes them rise to the surface while sludge and other solid particles float to the bottom. The remaining and cleaned wastewater passes through the separator. Depending on the grease separator system the separated substances can be disposed of either separately (partial disposal) or together with the total contents of the grease separator (complete disposal). A grease separator is a container, generally placed underground and usually outdoors, that is required in most commercial kitchens to collect the fats, oils and greases ("FOG") that run through the drains during normal kitchen operations. Put simply, grease separators allow the FOG material to float where it can be removed, and the water to sink to bottom of the separator where it flows out of the separator into the municipal water supply. Because separator water enters the city's supply, grease separators are closely monitored and regulated by city and environmental regulations. Grease separators are NOT intended for grease disposal - do not empty your fryer grease into a grease separator!
Most municipalities require foodservice establishments to install a grease separator as a method of limiting the amount of greases and solids that are passed through their water treatment facilities. Businesses with commercial kitchens that produce fats, oils and grease must have an interceptor (or separator) to keep contaminates out of the city’s sewer system. Typically, all kitchen drains are routed through a grease separator. The separator is a holding tank that separates grease and oils from the wastewater produced from sinks, floor drains and dishwashers. Water from these sources enters a grease separator where it is separated – grease floats to the top of the separator and is removed while the wastewater exits through an outlet pipe into the city’s sewer system. There are different methods on how the separator is cleaned (full pump or pump and return, for instance), often based on city requirements or service provider capability.
  • Have your grease separator serviced regularly by a knowledgeable service provider, such as DAR PRO Solutions; this preventive maintenance will help you avoid costly backups and overflows, and the service tech can inform you of any visible damage needing repair or attention by a plumber.
  • The grease separator should be examined periodically for wear or damage; the gasket sealing the lid to the separator may need to be replaced if you notice smells emanating from the separator itself.
  • Educate your employees on handling grease and food waste.
  • Use drain covers in sinks to capture debris and never pour grease down the drain.
  • Scrape food off plates into trash before rinsing to avoid washing the food waste into your grease separator.
